Cranberry Walnut Salad

My wife makes this salad every so often to compliment some of the meats I grill. From Greek Chicken to our Indian Spiced BBQ Chicken, this salad is a great way to start a meal or add to it! Simple, fast, and delicious!

Servings: 2

Prep Time: 10 minutes

Cook Time: 0 minutes

Ingredients:

2 cups Spring Mix

1/2 cup cherry tomatoes (sliced in half)

1 cup cucumber diced

2 oz. goat cheese

1 tbsp dried cranberries

1 tbsp walnuts

1/4 tsp black pepper

salt to taste

Instructions:

In a large salad bowl, layer spring mix followed by cucumber, tomatoes, cranberries, and walnuts. Scoop small chunks of goat cheese over the salad. Salt and pepper.

Don’t mix salad until prior to serving! Enjoy!
