Mint Chutney Cheese Sandwich

I got this idea while thinking about a sandwich that my Father-in-Law would love to eat. I wanted to eat a grilled cheese, but I knew I’d have to put some sort of Indian twist to it. And just like that, the Mint Chutney Cheese Sandwich was born!! To be honest, I might be making all future grilled cheese sandwiches like this after eating this!

Prep Time: 10 minutes

Cook Time: 15 minutes


8 slices of Oatmeal bread (or whichever sliced bread you prefer)

8 slices of Smoked Gouda cheese

8 slices of Vermont Cheddar cheese

1/2 medium red onion thinly sliced

4 tbsp of mint chutney

4 tbsp of tamarind sauce (for dipping)

1 tbsp of soft butter


Place a 12″ pan on medium heat. For each sandwich, butter the outsides of the sandwich bread and layer accordingly: one slice of bread, 2 slices of Vermont Cheddar, 1 tbsp of mint chutney (spread evenly), thin layer of onions, 2 slices of Smoked Gouda, topped with a slice of bread.

Place onto pan and toast each side until golden brown and cheese is fully melted. Flip often to avoid burning the bread while the cheese is melting. Remove from heat, slice in half, and use tamarind sauce for dipping.
