Okra is a great vegetable to grow in your garden! It grows vertically, with the vegetable growing near the top of the stem. It takes up little space and having two of these plants will provide enough okra for a family of four to enjoy a meal once per week. Our family loves bhindi masala, a classic Indian dish that’s best served with roti or naan bread.

Cook Time: 20 minutes
5 cups okra (1/2 inch pieces)
1 medium red onion chopped (1/2 inch pieces)
1 medium serrano pepper chopped
2 tbsp olive oil
1/2 tsp salt
1/2 turmeric powder
1 tsp garam masala
2 tbsp tomato paste
Wash and dry the okra. Cut okra into 1/2 inch long pieces, discarding the ends.
Heat oil in a 10″ frying pan on medium high heat. Add onion and serrano pepper. Cook for 2 1/2 minutes, stirring frequently. Add okra, salt, and turmeric powder and mix thoroughly.
Turn the heat down to medium and stir every 2-3 minutes for 18 minutes. Add tomato paste and garam masala. Mix well for 2 minutes. Then, turn off the stove, remove pan from heat, and let sit for 5 minutes before serving.
*Note: Do NOT cover the pan while cooking or else you’ll have a soggy dish!
