Lime Rice

1/2 cup Basmati rice  (rinsed and cleaned)

1 cup water

1 Bay leaf

8-10 fresh curry leaves

1/2 tsp mustard seeds

1/4 cup raw peanuts

1/4 tsp salt

1/8 tsp turmeric

1/2 tbsp ghee or olive oil

2 tsp lime juice

Red onion diced (optional)


Warm up ghee (or olive oil) in a 12″ frying pan on medium-high heat. Add mustard seeds and cover for 45 seconds. Turn the heat to medium and mix in the peanuts. Cook it for 45 seconds or until they are lightly browned. Add curry leaves, bay leaf, salt, turmeric and stir well. Mix rice and water into the pan. Turn the heat up to high and bring it to boil. Once boiling, turn the heat down to medium and cover. Keep covered and cook for 10-12 minutes. Turn off the heat, remove from stove, and let the pan stand for 5 minutes. Remove the lid from the frying pan, add lime juice and stir.

Serve with Rajmah (kidney beans stew), Grilled Vegetables, Kebabs, Tandoori Chicken, or Curry Chicken.
